fall oatmeal + yogurt bowl
the perfect, cozy combination of the yogurt bowl and warm oats.
ingredients:
oats of your choice (I prefer quick oats)
milk of choice (I prefer a creamy oat milk)
sweetener of choice (I prefer maple syrup)
greek yogurt — I prefer a flavored yogurt like honey. dairy-free yogurts work perfectly as well!
canned or jarred peaches — since peaches are no longer in season, my favorite go-to are the trader joe’s yellow cling peach halves in white grape juice.
pepitas — other nuts or seeds will do, but the nuttiness of pepitas pairs perfectly with this dish!
cinnamon
*optional* vegan butter or regular
preparation:
start by cooking your oats. the best thing about quick oats is that this whole dish can be prepared within a handful of minutes. I prefer to cook my oats on the stove top by melting a pad of vegan butter in a small pot on low heat.
once the butter melts, add in your serving of oats (I typically make around 1/2 of a cup) and toss it around in the butter until it’s fully incorporated.
next, add in 1 cup of your milk of choice along with sweetener (this will be to taste but typically around 1-2 tablespoons).
turn the heat up to medium and continue to stir until oats are fully cooked and the liquid is fully absorbed. oats will be thick and creamy.
remove oats from heat and serve in your favorite bowl.
lastly, toppings! add a few scoops of yogurt, sliced peaches, a small handful of pepitas (these taste amazing if you toast them in a saucepan for a minute or so) and a dash of cinnamon. enjoy!
